The colour of this honey ranges from light hay to pale green. Sometimes, it can be colourless and is thus considered the lightest kind of honey.
After crystallising, the colour changes from white to creamy yellow. It is as sweet as sugar beet syrup. Due to its high fructose content, it stays liquid for a long time and crystallises slowly.
It is distinguished by its soft and slightly tart taste. Its sweetness makes is especially popular with children. Thanks to its light aroma and consistency, it is a popular sweetener in many foodstuffs and beverages.
It comes from acacia groves in southern Slovakia, mostly around Rimavská Sobota, Veľký Krtíš and Lučenec.
